Loaded Buffalo Chicken No-tato Casserole

This thing is outrageously flavorful!  I can usually spot a good recipe a mile away, but this came out of nowhere!  It makes me wish I was a photographer..more than usual so you could see it better :-).   While we were eating my husband kept saying, this can't be on the plan, how can this be on a diet plan?  He was just sort of dazed, but he didn't let that slow him down.  Serve this on low carb tortillas or chop up the chicken into bite sized pieces and make nachos for the non-dieters in your life and you will be a hit on game day or any other day, for sure!

  1. Teresia, since you 'water' down the yogurt to buttermilk consistency, I just wonder if I could use my kefir instead. it's like a rather thin yogurt.

  2. Hi Janey, that's a good question because consistency wise it is a perfect alternative, but the flavor is going to be different. The kefir has more of a bite to me than buttermilk or yogurt. I first tried watering down sour cream, but it was too sweet. I want to say that at some point (I've made this for so long...) I did try kefir and it wasn't quite right to me. So it might be just a matter of choice but I really like the yogurt flavor better. Also if you decide to use it on E salads you will have to make sure the milk you kefir is fat free at best you can. Hope that helps.
