Thousand Island Dressing (S)

If the only thousand island dressing you've ever eaten has been from a bottle, then you are in for a very pleasant surprise!  By my standards thousand island dressing should have a smooth, slightly sweet, creamy flavor, a light bumpy texture and a  creamy color.   I have never found a bottled thousand island dressing that I liked; it always has a sharp twang, usually indicated by a orangey color which I find unpleasant.

Do I sound OCD about thousand island dressing?  LOL, I hope not, but,  I am picky about it; and all sauces and condiments.  I think they make or break a meal and this dressing has made ours many times.  Of course, since starting THM there is the small matter of having to make your own ketchup first, (unless you have a very good sugar free one that you can buy).   Making your own is a very small inconvenience because it zips together like nothing and sits there in the fridge for a LONG time till you get ready to make something else with it and the Trim Healthy Mama's ketchup is very good as an ingredient even if you are a picky ketchup eater.  This ketchup is made with 3 ingredients that you should have around the house.



1 cup mayonnaise - Duke's is on plan or another sugar free high quality mayo but it needs to taste very good
1/4 cup ketchup - the Trim Healthy Mama book's is the one I use and it works great in this (Pg. 411)
1/4 cup dill pickle relish or very finely diced dill pickles - I use Bubbie's from the natural food store
Enough truvia, SweetBlend, or stevia to give it a sweet flavor and it doesn't take much at all
1/4 cup water

Mix this together and it will be more of a dip consistency than a dressing so thin it will water or cream or a combination of the two.   Makes 2 cups.

To make this slaw I purchased a bag of shredded green and red cabbages and shredded a little purple onion into it.  I added the dressing and Instant Cole Slaw!


THAT'S IT!  It will thicken more in the fridge so just keep thinning with just a touch more water.


Now you have a great salad or slaw dressing, a sandwich spread, or a topping for BIG MAC IN A BOWL!

Served with meatloaf made using THM ketchup--YUMMY!
