Texas Guacamole Dip (S)

Never buy guacamole dip again!  This recipe is super easy, really yummy and will even last in the fridge for awhile because of all the health promoting citric and lactic acid, not to mention the beneficial probiotics, from the sour cream.  Add to that a taste that gets the crowd coming back for more and not even believing how easy to prepare and healthy something that tastes this good can be.


2 avacados
1 small lime or lemon
1 teaspoon Tony's seasoning or Lawry's seasoned salt for a milder flavor and        both claim to have no MSG
1 cup sour cream (2% greek yogurt can be subbed in here but it will be more tart so you might need to cut back on the lime)
I dip this with oven crisped Joseph's Lavish bread (it gets super crispy and stays that way for days if you want to crisp it ahead)  I use 1/2 of a piece for an S which is well under the 10 gram carb rule of thumb for S meals and snacks, but sliced cucumbers could work too if you can't do grains!          

Mash the avacado well and squeeze the lime over it.  Blend in the seasonings and sour cream.  Don't be afraid to make this a few hours ahead of time as long as you keep it chilled and covered, but if you take it to a get together, don't expect to bring any back home!
That's It!  You're ready for some football snacks or a family gathering.  I've made this for 20 years now and it  seems to get more popular every year!
Ground turkey on Joseph's Pita bread which is spread with Laughing Cow Light cheese and topped with lettuce, pico and avacado "dip".

Here's my pico recipe!


2 really large or 4 medium fresh tomatoes (I love the organic vine ripened kind)
1/4 medium yellow onion
1 fresh jalapeño pepper (seeds removed for company or left in for just our tastes)
1/2 to 1 tsp celtic sea salt
  (you should try this salt ir adds some good minerals, but is a little saltier than regular table salt)
1/2 or 1 lemon or lime depending on the size
You can add a little chopped cilantro here if you like it, but it is good without it.

Chop the vegetables pretty finely and toss with the salt and lemon juice.  A few pulses in the processor will give you a really fresh salsa too!
