Peppermint Chocolate Chia Pudding


Chia super food meets peppermint patties for a healthy holiday treat.  If a recipe with this combination and sweetened with our THM Sweet Blend is out there I couldn't find it, so I did what I do.  I made chocolate syrup!  But this time with almond milk instead of  water and chia seeds for thickener.  Fantastic flavor, just the best chia seed pudding that I have tasted.  Give this a try it just takes a minute of two to whip up!  In case your memory needs refreshing see the list below for great reasons to make sure you eat plenty of one of the world's healthiest foods.



In a saucepan mix:
1 cup hot unsweetened almond milk
2 tablespoons Truvia - more if needed
1 pinch of sea salt (even if you have to use regular salt don't leave out the salt!)
Whisk, whisk this in thoroughly, then add in:

1 1/2 tablespoons cocoa (I used Hersheys so any name brand should work)
Keep whisking!  Then add:

1/4 teaspoon peppermint extract (I used Frontier but I also tried it with 2 drops of high quality peppermint essential oil instead for maximum health benefits, I think the purists will definitely approve of this addition!)

Once all ingredients are thoroughly mixed together in the sauce pan add in:
1/4 cup chia seeds
Stir thoroughly and immediately put over into a jar with a tight fitting lid.  Leave for at least 30 minutes in the fridge.  When ready to eat take out and spoon into ramkins and garnish with mint leaves, or your choice.
